Mimi’s Potato Salad
3 pounds red potatoes
1 cup mayonnaise
1/2 cup mustard
3 eggs, hard-boiled, peeled and chopped
Dill relish, to taste
Salt and pepper, to taste
Cut potatoes in half and place in a large stockpot. Cover with water and bring to a boil over high heat. Cook until tender. Drain. In a bowl, combine potatoes, mayonnaise, mustard, eggs and dill relish. Season with salt and pepper to taste.
