Southern Sausage & Tomato Gravy
Southern Sausage & Tomato Gravy
1/2 cup oil
2 tablespoons flour
Water, as needed
Fresh tomatoes, chopped (or canned tomatoes, drained)
1/2 package mild sausage, browned (I use Tennessee Pride.)
Salt
Pepper
In a cast-iron skillet, add oil and flour. Whisk over medium heat until mixture turns deep brown, forming a roux. Slowly add water, stirring constantly, until mixture becomes a smooth brown gravy. Add tomatoes and stir well. Stir cooked sausage into the gravy mixture, stirring occasionally until everything is heated through. Add salt and pepper to taste. Serve over warm homemade cathead biscuits.
