Banana Bread

Banana Bread

8 frozen bananas, thawed with liquid reserved
1 1/2 cups sugar
1 stick unsalted butter, melted 
2 eggs
2 teaspoons vanilla extract
3 cups all-purpose flour
1 1/2 teaspoons baking soda 
1 teaspoon baking powder
1/2 teaspoon salt
1 to 2 cups chopped nuts (We prefer walnuts.)

Heat oven to 350 F. Mash bananas in large bowl. Mix in sugar, butter, eggs and vanilla. Add dry ingredients and nuts, and mix until just combined. Pour evenly into two greased loaf pans. Bake 1 hour. Cover with foil for 15 minutes at the end. The internal temperature should reach 205 F.
