SALMON CROQUETTES

Ingredients

1 (16-ounce) can salmon, drained, deboned and flaked
1/2 cup cornmeal
1/2 cup plain flour
1/2 teaspoon salt
1/2 teaspoon baking powder
Pinch of soda
1 egg
1/2 cup buttermilk
Cooking oil

Preparation

Combine all ingredients except oil and mix well. Heat 1/4-inch of oil in a skillet over medium-high heat. Shape mixture into croquettes. Drop into hot oil. Cook about 2-3 minutes per side, until golden brown. Makes 8 croquettes.
