1 cup dried soybeans
2-3 medium apples, diced
1/4 cup chopped celery
1 (8-ounce) container cottage cheese
Salt and pepper to taste
Wash soybeans. Place in a slow cooker and pour boiling water over to cover. Cover and cook on low for 8 hours; do not overcook. Drain soybeans and cool. Add apples and celery. Blend in cheese, salt and pepper. Cover and chill 2 hours before serving. Makes 8-10 servings.
