BLACK BEAN SOUP, Doris McGuire, Limestone County
Ingredients
1 pound ground chuck, browned and drained
1 can black bean soup
1/2 cup water
1 (16-ounce) jar salsa
1 (15-ounce) can black beans
1 cup of instant brown rice
1 bag of corn chips
TOPPINGS:
1/4 cup green onions, chopped
1 cup shredded cheddar cheese
1/2 cup chopped tomatoes
1/2 cup sour cream, spooned
Preparation
Combine first 5 ingredients. Cook on medium 1 hour on stovetop or 4 hours in slow cooker. Prepare rice and set aside. Pour soup mixture over bed of brown rice into 2-quart serving dish. Garnish with toppings – onions, cheese, tomatoes and sour cream. Serve with corn chips. Serves 6-8.
