CHILLED BLUEBERRY SOUP, Ashley Smith, Russell County
Ingredients
1 pint fresh blueberries
1/2 cup sugar
1/2 teaspoon cinnamon
1 cup water
2 1/4 cups plain yogurt
Preparation
Bring blueberries, sugar, cinnamon and water to a boil in saucepan (2-quart or larger). Boil for 3 minutes and then simmer for 10 minutes. Let cool. Place in blender. Add yogurt. Blend well and chill completely. Serve in cups/bowls. Lightly sprinkle with cinnamon for color. Garnish with a dollop of yogurt and fresh blueberries.
