Ingredients

1 1/2 pounds ground chuck
1 envelope fajita seasoning
2-3 cups shredded Monterey Jack cheese
1 (10-count) package (8-inch) flour tortillas
1 (16-ounce) jar salsa or taco sauce
Sour cream

Preparation

Brown chuck in skillet; drain well. Stir in fajita seasoning, mixing well. Heat a flat, non-stick griddle to 300 degrees. Place two tortillas on griddle; heat to warm. Flip tortillas. Sprinkle each tortilla with a layer of cheese, followed by a layer of chuck and another thin layer of cheese. Top with two more tortillas. Cook for 5 minutes, or until cheese is melted. Turn and cook 5 minutes more. Repeat with remaining tortillas. Cut each tortilla in quarters and serve with salsa and sour cream. Makes 20 appetizer servings or 3-4 main-dish servings.
