1 pound ground beef
1 large onion, chopped
1 bell pepper, chopped
2 (14.5-ounce) cans diced tomatoes, undrained
2 (16-ounce) cans chili beans, undrained*
3 cans tomato soup
1 tablespoon chili powder
1 teaspoon sugar
1/4 cup ketchup
Salt and pepper to taste
Shredded cheddar cheese
Corn chips


In a large pot, brown ground beef, onion and pepper. Drain. Stir in next seven ingredients. Bring to a boil; reduce heat and simmer, partially covered, 30-45 minutes, stirring occasionally and adding a small amount of water if chili becomes too thick. Top each serving with cheese and corn chips, if desired. (*Lynn uses Bush’s chili beans.) Makes 6-8 servings.
