ITALIAN CREAM CAKE

Ingredients

1 stick margarine
1/2 cup solid vegetable shortening
2 cups sugar
5 egg yolks
1 teaspoon soda
1 cup buttermilk
2 cups all-purpose flour
1 cup coconut
1 1/2 cups chopped pecans, tossed lightly with small amount of flour
1 teaspoon vanilla
5 egg whites, stiffly beaten
Frosting (recipe follows)

Preparation

Cream margarine and shortening; add sugar and beat until smooth. Beat in egg yolks one at a time. Stir soda into buttermilk. Add buttermilk alternately with flour to creamed mixture. Stir in coconut, nuts and vanilla. Gently fold in egg whites. Bake in three greased 8- or 9-inch cake pans at 350 degrees for 35 minutes. Cool; spread Frosting between layers and on top and sides of cake.
