MOTHER’S CHOCOLATE PIE

Ingredients

1 1/2 cups sugar
2 tablespoons cocoa
2 tablespoons flour
2 cups milk
2 egg yolks, beaten
1 teaspoon vanilla
1 (9-inch) pie crust, baked and cooled
2 egg whites
1/4 teaspoon cream of tartar
1/2 cup sugar
1 teaspoon vanilla

Preparation

Combine 1 1/2 cups sugar, cocoa and flour in a saucepan. Add milk a small amount at a time, blending well with a wire whisk. Add beaten egg yolks and vanilla, mixing thoroughly. Cook over medium heat, stirring constantly, until mixture thickens, about 10-12 minutes. Pour into pie crust. In a clean bowl, beat egg whites with cream of tartar until foamy. Gradually add 1/2 cup sugar, beating until stiff peaks form. Fold in vanilla. Spread meringue over pie filling. Bake at 350 degrees for 15 minutes, or until meringue is lightly browned.
