MY MOTHER’S CHOCOLATE FROSTING

Ingredients

1 1/2 sticks margarine
3 cups sugar
3-4 tablespoons cocoa
3/4 cup milk
2 teaspoons vanilla

Preparation

Melt margarine in a saucepan over low heat. Add sugar, cocoa and milk, blending well with a wire whisk. Increase heat to medium and bring to a boil, stirring constantly. From time mixture starts to boil, boil 8 minutes, stirring occasionally. Remove from heat; add vanilla. Place saucepan in a sink filled with ice water. Stir constantly, until frosting begins to thicken. Spread between layers and on top and sides of cake. Frosting is fudge-like. If it becomes too thick or if a softer icing is desired, remove pan from ice water, add a small amount of milk and beat with mixer.
