POTATO SOUP

Ingredients

6 large baking potatoes, peeled and diced
2 stalks celery, chopped
2 carrots, peeled and sliced
1 onion, chopped
1 can cream of chicken soup
1 stick margarine, cut into chunks
1 (8-ounce) package cream cheese, cubed
2 cups milk
Bacon bits
Grated Cheddar cheese
Chopped green onions

Preparation

Place potatoes, celery, carrots and onion in a large pot. Cover with water. Bring to a boil over high heat. Cover, reduce heat and simmer for 15-20 minutes, or until potatoes are tender. Drain. Add cream of chicken soup, margarine, cream cheese and milk, stirring until margarine and cheese melt and mixture is blended. Bring to a boil. Cover, reduce heat and simmer for 30-45 minutes, stirring frequently. Serve garnished with bacon bits, cheese and green onions.
