BISCUITS, QUICK SOUTHERN STYLE
1/4 cup vegetable shortening or lard
2 cups self-rising flour, plus more for rolling and cutting
1 cup buttermilk
1/4 cup melted butter
Cut shortening into flour with a pastry blender or fork until crumbly; add buttermilk. Stir just until moistened. Turn dough out onto floured surface and pat to 1/2 -inch thickness; cut with a 2-inch square or round biscuit cutter and place on a lightly greased baking sheet. Bake at 425 degrees for 14 minutes or until golden brown. Remove from oven and brush the hot biscuits with melted butter. Serve hot.
