CHINESE-STYLE CHICKEN SALAD

Ingredients

1 head iceberg lettuce, shredded
2 cups cooked chopped chicken
1/2 cup chopped green onions
1/2 cup slivered almonds, lightly roasted
1 (3-ounce) can Chinese fried noodles
DRESSING:
5 tablespoons red wine vinegar
1/2 cup salad oil or olive oil
1 tablespoon sugar
1 clove garlic, crushed

Preparation

Mix all dressing ingredients about 1 hour before serving salad. Set aside. Mix lettuce, chicken, and onion. Top with almonds. Just before serving, toss in noodles. Top with dressing and toss again. Serve at once.
