QUICK YEAST ROLLS

Ingredients

1 package dry yeast
2 cups lukewarm water
1/4 cup plus 1 teaspoon sugar
1 beaten egg
3/4 cup butter, melted
4 cups self-rising flour

Preparation

Dissolve yeast in warm water, and let sit until yeast begins to swell. Mix in remaining ingredients, and spoon batter into a well-greased muffin or biscuit pan until 1/2 to 2/3 full. Bake for 20 minutes in a preheated oven of 400 degrees. Unused batter can be covered and refrigerated for up to one week. Makes 14 rolls.
