Vegetable-Hamburger Soup
Ingredients
Start-to-finish: 1 hour, 45 minutes (15 minutes active)
Serves 8-10
1½ pounds ground beef
1 medium onion, chopped
4 cloves garlic, minced
4 cups V-8 vegetable juice
2 cups water
3 large potatoes, pared and cut into cubes
2 celery stalks, chopped
3 carrots, chopped
1 bell pepper, chopped
1 zucchini, chopped
15-ounce can green beans
15-ounce can whole kernel corn
15-ounce can stewed tomatoes
2 tablespoons chicken bouillon
2 teaspoons salt
2 teaspoons garlic powder
½ teaspoon pepper
Preparation
Brown ground beef. Add onions and garlic, and cook 2-3 minutes more. Drain.
In a large pot, add all ingredients and bring to a boil. Reduce heat, cover and simmer for 90 minutes or until vegetables are tender. This recipe can also be made in a slow cooker for 6-8 hours on low or 4-5 hours on high.
