Cindy’s Chicken Stew

Ingredients

Start-to-finish: 45 minutes

1 tablespoon olive oil 

1/2 onion, chopped

1 small bell pepper, chopped

1 cup macaroni, cooked

1 cup chopped, cooked chicken (you can use a rotisserie chicken)

1 cup okra, cut into bite-sized pieces 

2 15-ounce cans tomato sauce

2 15-ounce cans chopped tomatoes

2 15-ounce cans corn

2 chicken bouillon cubes

2 cups water

Salt, pepper and red pepper to taste

Preparation

In a Dutch oven or soup pot, saute onion and bell pepper in olive oil until soft. Add the rest of the ingredients. Simmer on medium for at least 30 minutes. Stir often. 

Alternative cooking method: Place all ingredients in a slow cooker and cook on low for 8 hours or high for 4 hours.
