JuJu’s Corn Muffins

Ingredients

Start-to-finish: 30 minutes 

1 egg

3/4 cup corn meal

1/4 cup flour

3 teaspoons baking powder

1/2 teaspoon salt

2 tablespoons sugar

3/4 cup plus 2 tablespoons milk

1/4 cup oil

Preparation

Beat egg. Mix all ingredients together, including egg.

Pour into greased mini muffin tins or regular sized muffin tins.

Bake for 20 minutes at 425 F.
