BLUEBERRY PIE FILLING
Ingredients
3 1/2 cups blueberries, divided
1 cup water
1/2 cup sugar
2 tablespoons cornstarch
1 tablespoon lemon juice
1 (9-inch) pie shell, baked
Preparation
Place 2 cups blueberries in a saucepan and mash. Add water. Bring to a boil, then reduce heat and simmer for 3 minutes. Remove from heat and strain, reserving juice. (Should yield 1 cup liquid.) To 1 cup liquid, add sugar and cornstarch, blending until smooth. Bring to a boil and boil for 1 minute. Remove from heat; stir in lemon juice. Cool mixture. Place remaining 1 1/2 cups blueberries in pie shell. Pour cooled mixture over berries. Chill 2 hours.
