2 pints fresh blueberries, rinsed and drained
1 quart white vinegar, divided
1/2 cup sugar
Place blueberries, 1 1/2 cups of the vinegar and the sugar in a saucepan; simmer gently for five minutes. Cool; pour into a 1 1/2-quart jar with remaining vinegar. Cover and let stand at least two days. Strain vinegar as it is used, but do not discard blueberries. Store in refrigerator.
