HAM SLICE WITH BLUEBERRY SAUCE

Ingredients

1 (2-pound, 1-inch-thick) fully cooked center-cut ham slice
1/3 cup water
1 tablespoon cornstarch
1/3 cup apricot preserves
2 tablespoons brown sugar
2 tablespoons dry red wine
4 teaspoons lemon juice
1 cup fresh blueberries

Preparation

Trim excess fat from ham slice. Place ham on a rack in a shallow baking pan. Bake at 350 degrees for 30 minutes. Meanwhile, for the sauce, combine water and cornstarch in a small saucepan, blending until smooth. Stir in preserves, brown sugar, wine and lemon juice. Cook over medium-low heat, stirring, for 5-6 minutes, until thickened and bubbly. Stir in blueberries; cook and stir 2-3 minutes longer. To serve, spoon sauce over ham. Makes 6 servings.
