CRABMEAT AU GRATIN
Ingredients
3 tablespoons butter or margarine
3 tablespoons all-purpose flour
2 cups milk
2 cups crabmeat*
1/2 teaspoon salt
Dash of nutmeg
1/2 cup breadcrumbs
1/2 cup grated Cheddar cheese
Preparation
Melt butter in a saucepan over medium heat; slowly stir in flour until smooth. Stir in milk and continue heating, stirring constantly, until mixture thickens, about 5 minutes. Remove from heat. Add crabmeat, salt and nutmeg, blending well. Pour into a greased 9- x 9-inch baking dish. Sprinkle breadcrumbs and cheese over casserole. Bake at 350 degrees for about 30 minutes, until golden brown. Makes 4 servings. (*Claw meat is best.)
