GOURMET MEATBALLS

Ingredients

2 1/2 pounds ground chuck
1 cup breadcrumbs
1 egg
1/4 teaspoon salt
1 teaspoon dried minced onion
1/2 teaspoon garlic salt
2 1/2 tablespoons parsley flakes
2 tablespoons ketchup
2 (16-ounce) cans cranberry sauce
2 (11-ounce) bottles chili sauce
1/3 cup packed light brown sugar
2 tablespoons lemon juice

Preparation

In a large bowl, combine chuck, breadcrumbs, egg, salt, onion, garlic salt, parsley and ketchup, mixing together with hands. Shape into walnut-sized balls. Place in two 9- x 13-inch baking dishes that have been sprayed with non-stick cooking spray. In a large saucepan, combine cranberry sauce, chili sauce, brown sugar and lemon juice. Heat over medium heat, stirring constantly, until cranberry sauce is dissolved and mixture is blended. Pour over meatballs. Bake at 350 degrees for 30 minutes. Makes 6-7 dozen meatballs. (Recipe can be halved. Use 1 egg even if halving.)
