STRAWBERRY PIZZA
STRAWBERRY PIZZA
Ingredients
2 sticks margarine, softened
2 cups all-purpose flour
1/3 cup packed light brown sugar
1 cup chopped pecans
•••
1 (8-ounce) package cream cheese, softened
3 cups powdered sugar
1 (12-ounce) carton non-dairy whipped topping
•••
2 cups sugar
6 tablespoons cornstarch
2 cups water
6 tablespoons strawberry gelatin
Few drops red food coloring
2 pints fresh strawberries, sliced lengthwise
Preparation
In a mixing bowl, combine margarine, flour, brown sugar and pecans, mixing well. Press into a 12-inch pizza pan. Bake at 350 degrees for 20-25 minutes, until lightly browned. Cool completely. In a large bowl, cream together the cream cheese and sugar; fold in whipped topping. Spread over cooled crust, working filling to build a “wall” around the edges of the crust. Set aside. In a saucepan, combine sugar, cornstarch and water; cook, stirring, until mixture is clear and thickened, about 10 minutes. Remove from heat. Stir in gelatin and food coloring, mixing well. Cool completely. Stir in strawberries. Pour over filling. Chill well before serving.
