1 cup cheddar cheese-flavored crackers, crumbled
2 tablespoons taco seasoning
8 boneless, skinless chicken breasts
1 cup milk
2 cups salsa
4 ounce cheddar cheese, shredded
4 ounce Monterey Jack cheese, shredded
2 tablespoons butter
Mix cracker crumbs and taco seasoning. Spread butter over chicken, and then roll chicken in mixture and place in baking dish. Pour milk over chicken. Spread salsa over each chicken breast.
Sprinkle cheeses on top. Cover with aluminum foil and bake at 425 degrees for 45 minutes. Remove foil and bake for another 10 to 15 minutes.
