CHEDDAR HUSHPUPPIES

Ingredients

1 1/2 cups cornmeal
1/2 cup all-purpose flour
2 teaspoons salt
1 teaspoon baking powder
1/2 teaspoon baking soda
3/4 cup grated Cheddar cheese
1/4 cup minced onion
3/4 teaspoon hot pepper sauce
2 large eggs
1/2 cup buttermilk
Oil for deep frying

Preparation

In a mixing bowl, combine cornmeal and all remaining ingredients except oil, blending well. Pour oil to a depth of 2 inches in a Dutch oven or electric skillet. Heat to 375 degrees. Drop batter by tablespoonfuls into hot oil, a few at a time. Cook 4-6 minutes, turning once, until golden brown. Drain on paper towels. Makes about 2 dozen.
