CRAB & MUSHROOM STUFFED POTATOES

Ingredients

4 medium potatoes, baked and cooled slightly
1/4 cup butter
1/4 cup whipping cream, heated to lukewarm
1 teaspoon salt
1/8 teaspoon pepper
1 (3-ounce) can chopped broiled-in-butter mushrooms, drained
1 tablespoon grated onion
1 cup shredded sharp Cheddar cheese, divided
1 (6.5-ounce) can crabmeat, drained and flaked

Preparation

Cut potatoes in half lengthwise. Carefully scoop out pulp and place in a bowl; mash. Add butter, heated cream, salt and pepper, and beat until fluffy. Add mushrooms, onion, 2/3 cup of the cheese and the crabmeat. Spoon mixture into potato skins. Sprinkle remaining cheese over top of potatoes. Bake at 350 degrees for 20 minutes. Makes 8 servings.
