Corn fritters


Start to finish: 30 minutes 
Servings: 6 
3/4 cups all-purpose flour
1 tablespoon sugar
1 teaspoon baking powder
2 whole eggs
1/2 cup milk
1 teaspoon kosher salt
1/2 teaspoon cayenne pepper
4 cups corn kernels (fresh, frozen or canned)
Canola oil, for frying
Optional toppings – Powdered sugar and maple Syrup 


In a medium-sized bowl, mix flour, sugar and baking powder. Add eggs, milk, salt and cayenne pepper, and stir until well blended. Fold corn into batter. Heat canola oil to 365 F and drop spoonfuls of batter into the oil, and cook until both sides are golden brown. Drain on a towel-lined plate and top with powdered sugar or maple syrup.
