CRANBERRY-APPLE SWEET POTATOES
5-6 medium sweet potatoes, peeled and cubed
1 (21-ounce) can apple pie filling
1 (8-ounce) can whole-berry cranberry sauce
2 tablespoons apricot preserves
2 tablespoons orange marmalade
Bring cubed potatoes to a boil in lightly salted water to cover and cook until fork-tender, about 15 minutes. Drain and set aside. Spread pie filling in a greased 8- x 8-inch baking dish; arrange sweet potatoes over apples. In a small bowl, combine cranberry sauce, preserves and marmalade. Spoon over sweet potatoes. Bake, uncovered, at 325 degrees for 20-25 minutes, or until heated through. Makes 8-10 servings.
