MICROWAVE STUFFED PEPPERS

Ingredients

1 pound ground beef, crumbled
1 medium onion, minced
1 teaspoon salt
1/4 teaspoon pepper
1 1/4 cups cooked rice
1 (16-ounce) can tomato sauce, divided
4 large green bell peppers

Preparation

Place ground beef and onion in a glass dish. Cover with paper towel and microwave on high for 6-7 minutes, or until meat is no longer pink and onion is tender; drain. Stir in salt, pepper, rice and 3/4 of the tomato sauce; set aside. Slice tops from peppers; remove seeds and membranes. Stuff beef mixture into peppers. Place stuffed peppers in a shallow glass dish; pour remaining tomato sauce over peppers. Cover dish loosely with plastic wrap. Microwave on high 8-10 minutes, until peppers are tender. Makes 4 servings.
