Ingredients

4-6 skinless, boneless chicken breasts
1 stick margarine
1 medium onion, chopped
1 (10-inch) skillet cornbread
1 loaf white bread
Reserved chicken broth and canned chicken broth to equal 4-8 cups
1 teaspoon poultry seasoning

Preparation

Cook chicken in boiling water to cover until tender. Remove from broth, reserving broth. Cool chicken; shred and set aside. Melt margarine in a skillet. Sauté onion in margarine until tender; set aside. Crumble cornbread into a large mixing bowl, then tear enough loaf bread into pieces to equal the amount of cornbread crumbs. Add to crumbled cornbread, along with the chicken and sautéed onion. Add enough broth to make soupy. Stir in poultry seasoning. Pour into a 9- x 13-inch pan. Bake at 350 degrees for 25-30 minutes, or until browned on top. Makes 6-8 servings.
