Slow Cooker Thai Peanut Chicken

Ingredients

Start-to-finish: 4 hours, 5 minutes 

(5 minutes active) 

Serves 6

1 small red or orange bell pepper, sliced

1 small yellow bell pepper, sliced

1 white onion, chopped

2 pounds boneless, skinless chicken breasts

1/2 cup chunky peanut butter

1 tablespoon lime juice

1/2 cup chicken broth

1/4 cup soy sauce

2 tablespoons honey

For serving:

Brown rice or noodles

1/4 cup crushed peanuts for topping

1/4 cup cilantro, chopped

Preparation

Place peppers and onion at the bottom of the slow cooker. This will act as a stand for the chicken so it doesn’t dry out. Place chicken on top.

In a medium bowl, mix together peanut butter, lime juice, chicken broth, soy sauce and honey. Pour sauce over chicken.

Cook on high for 3-4 hours or low for 6 hours. In the last 15 minutes of cooking time, shred chicken with two forks. Cover and continue cooking for 15 minutes. Remove from slow cooker and serve over brown rice or noodles. Top with peanuts and cilantro.
