Peanut Butter and Banana Muffins

Ingredients

Start-to-finish: 20 minutes (10 minutes active) 

Makes 24 mini muffins or 12 regular muffins 

1 cup peanut butter

2 eggs

2 bananas

1/2 teaspoon baking soda

1 teaspoon vanilla extract

2 tablespoons honey

3 tablespoons brown sugar

3 tablespoons self-rising flour

Nuts (for topping, optional) 

Dark chocolate chips (for topping, optional)

Preparation

Heat oven to 400 F. Mix all ingredients until well blended. Pour batter into a greased muffin tin. Sprinkle on toppings. Bake 9-10 minutes.
