Chocolate Peanut Butter Balls

Ingredients

Start-to-finish: 1 hour, 15 minutes (30 minutes active)  

2 cups creamy peanut butter    

3/4 cup salted butter, softened

1/2 teaspoon vanilla extract

3 3/4 cups powdered sugar (amount may vary)

2 1-pound packs chocolate candy coating

Preparation

Mix peanut butter, salted butter and vanilla in a large bowl.

Add powdered sugar, a little at a time. Stop adding powdered sugar when you can form the mixture into a ball without it sticking to your hands. Cover and let sit in refrigerator 15 to 25 minutes until firm.

Shape dough into 1-inch balls. Cover and refrigerate again for 15 to 20 minutes.

Melt chocolate according to package directions. Dip peanut butter balls, one at a time, into melted chocolate. Let the excess chocolate drip. Place dipped peanut butter balls onto wax paper until hardened.
