1 (21-ounce) can apple pie filling
6 (8-inch) flour tortillas
1 teaspoon cinnamon
1/3 cup butter or margarine
1/2 cup granulated sugar
1/2 cup firmly packed brown sugar
1/2 cup water
Spoon equal amounts of pie filling in the center of each tortilla; sprinkle with cinnamon. Roll tortillas up and place seam side down in a lightly greased 2-quart baking dish. In a medium saucepan, bring butter, sugars and water to a boil. Reduce heat and simmer, stirring constantly, for 3 minutes. Pour over enchiladas; let stand for 30 minutes. Bake at 350 degrees for 20 minutes. Top with vanilla ice cream, if desired.
Makes 4-6 servings.
