1 large cauliflower, cut into florets
1 teaspoon salt, divided
3 cups water
1/4 cup butter or margarine, melted
1 tablespoon sugar
1 cup round buttery-flavored cracker crumbs
1 1/2 cups shredded Cheddar cheese, divided
1 medium onion, chopped
1/2 cup chopped green pepper
1 (10-ounce) can mild diced tomatoes and green chilies
Combine cauliflower, 1/2 teaspoon salt and water in a saucepan. Bring to a boil. Cover, reduce heat and simmer 10 minutes, or until tender. Drain and set aside. In a large mixing bowl, combine butter, sugar, remaining 1/2 teaspoon salt and cracker crumbs. Stir in cauliflower, 1 cup cheese, onion, green pepper and diced tomatoes. Spoon into a lightly greased 11- x 7-inch baking dish. Bake at 350 degrees for 30-35 minutes. Sprinkle with remaining 1/2 cup cheese and bake 5 minutes, or until cheese melts.
Makes 6-8 servings.
