SWEET POTATO SOUFFLÉ

Ingredients

3 cups mashed sweet potatoes
2 eggs
1/2 cup milk
1 cup sugar
1 teaspoon vanilla
1 stick (1/2 cup) margarine

TOPPING:
1 cup brown sugar
1/3 cup self-rising flour
1/2 to 1 cup chopped pecans
6 tablespoons (3/4 stick) margarine

Preparation

Mix first six ingredients, and pour into a buttered 9-inch by 13-inch pan.
Mix together brown sugar and flour; sprinkle on top of sweet potatoes. Put broken pecans on top. Melt margarine, and pour over other ingredients. Bake at 350 degrees for 1 hour. Recipe doubles easily.
