Potato Cake


2 cups sugar
1 cup shortening
1 cup mashed potatoes (not sweet potatoes)
4 eggs
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 teaspoon cinnamon
½ cup cocoa
1 teaspoon vanilla
½ cup milk
1 cup chopped pecans (if desired)


In a mixing bowl, cream first 3 ingredients. Add eggs one at a time beating well.

Sift together flour, baking powder, salt, cinnamon and cocoa. Add to shortening mixture alternately with milk and vanilla. Fold in chopped nuts if desired. Spread batter in 3 (9-inch) greased and floured cake pans. Bake at 350 F for 25-30 minutes or until edges of cake begin to pull away from sides of pan. When layers are cool, assemble cake with Coffee Cocoa Icing.
