CLASSIC MEATLOAF

Ingredients

2 1/4 pounds extra-lean ground beef
1 (8-ounce) can tomato sauce
1 (6-ounce) package stuffing mix
2 eggs, lightly beaten
1 onion, chopped
Salt and pepper to taste
1/2 cup ketchup OR 1/4 cup ketchup AND 1/4 cup Worcestershire sauce

Preparation

Preheat oven to 350 degrees. Combine meat, tomato sauce, stuffing mix, eggs and onion. Divide mixture evenly and press into two loaves. Place loaves on a cooking rack coated with non-stick cooking spray. Place cooking rack in a pan to catch drippings. Bake 55 minutes. Halfway through cooking time, top loaves with 1/4 cup ketchup each, or top one loaf with ketchup and one with Worcestershire sauce. Makes 8-10 servings.
