OVEN-ROASTED PORK DISH
1 1/2 pounds boneless pork loin, sliced
8–10 baby carrots
1 large potato, cut into wedges
1 medium onion, cut into wedges
1/2 medium green bell pepper, cut into strips
1/4 teaspoon ground sage
Salt and pepper to taste
1 tablespoon olive oil
Brown pork slices in a large skillet sprayed with non-stick cooking spray.
Coat a 2-quart casserole dish with non-stick cooking spray. Add pork and vegetables and sprinkle with seasonings. Drizzle olive oil over all. Cover loosely with aluminum foil.
Bake at 400 degrees for 45 minutes, stirring halfway though cooking time. Serves 6.
