CHERRY FRUIT CAKE

Ingredients

4 cups self-rising flour, divided
4 cups pecans
1 pound candied cherries
6 eggs, separated
2 sticks margarine
2 cups sugar
1 tablespoon vanilla extract
1 teaspoon cinnamon

Preparation

Preheat oven to 300 degrees. Mix pecans and cherries with 2 cups flour. Set aside.
Mix egg yolks with softened margarine, sugar, and remaining flour. In a separate bowl, beat egg whites. Add to margarine mixture. Stir in fruit and nut mixture. Pour into a tube pan coated with non-stick spray. Bake at 300 degrees for 1 1/2 hours.
