MAMA SNOOK’S ROLLS

Ingredients

2 cups milk
1/2 cup oil
1/2 cup sugar
1 package dry yeast
1/4 cup water
5 cups sifted all-purpose flour, divided
2 teaspoons salt
2 teaspoons baking powder
1/2 teaspoon soda
1 stick margarine, melted

Preparation

In a saucepan, combine milk, oil and sugar and heat over medium heat until scalded. Cool to lukewarm. In a small bowl, dissolve yeast in water; add to milk mixture. Place 4 cups flour in a large bowl. Stir in milk/yeast mixture, mixing well. Let rise in a warm place 1-2 hours, or until doubled in bulk. Mix in salt, baking powder, soda and remaining 1 cup flour. Cover and chill at least 4 hours. Turn out onto lightly floured surface and knead with flour to make dough less sticky. Roll out on a floured board to 1/2-inch thickness. Cut with 3-inch biscuit cutter. Dip half of each roll into melted margarine; fold in half. Place on a baking sheet and let rise 30 minutes. Bake at 350 degrees for 15-20 minutes, until golden brown. Makes about 4 dozen rolls. (Dough can be refrigerated up to 10 days.)
