BROCCOLI CASSEROLE

Ingredients

1 (16-ounce) package frozen chopped broccoli
2 cups water
1 cup rice, uncooked
1 can cream of mushroom soup
2 eggs, beaten
1 (8-ounce) jar pasteurized process cheese spread
1 small onion, chopped
1/2 cup mayonnaise
1/2 tube round buttery-flavored crackers, crushed

Preparation

Cook broccoli according to package directions; drain. Bring water to a boil in a saucepan; stir in rice. Cover, reduce heat and simmer 15-20 minutes, until rice is tender. In a mixing bowl, combine drained broccoli, rice, mushroom soup, eggs, cheese spread, onion and mayonnaise, blending well. Pour into a lightly greased 9- x 13-inch casserole. Sprinkle with crushed crackers. Bake uncovered at 350 degrees for 45 minutes. Makes 8-10 servings.
