CHICKEN AND DRESSING
1 (3- to 5-pound) hen, cut up and sprinkled with salt and pepper
2 large stalks of celery, chopped
1 large onion, chopped
4 cups water
Place chicken, celery, onion and water in a 6-8 quart pressure cooker over medium to high heat. Cook for 35 minutes after the pressure gauge starts to jiggle. Remove from heat and cool down. Remove chicken from the broth and set aside until cool, reserving broth. Remove skin and bones and cut chicken into bite-size pieces.
