Ingredients

1 1/2 cups yellow cornmeal (not mix)
1 1/2 cups self-rising flour
2 1/2 teaspoons baking powder
1 teaspoon salt
1 large stalk celery, chopped
1 medium onion chopped
4 tablespoons dry milk powder
1 1/2 cup water, or more if needed
Oil

Preparation

Mix all ingredients except oil until well blended. Pour enough oil into 10-inch iron skillet to cover bottom well. Heat over high heat on a burner until hot; remove from heat. Pour in the cornbread mixture and dip the oil up over the top of cornbread. Bake at 425 degrees for 25 minutes. Remove from oven and let cool. Crumble when cool.
