Crispy Oat Cookies

Ingredients

1 cup butter, softened
1 cup sugar
1 cup brown sugar
1 egg
1 cup vegetable oil
1 teaspoon vanilla
3 ½ cup flour
1 teaspoon baking soda
½ teaspoon salt
1 cup regular oats, uncooked
1 cup crushed corn flakes
1 cup pecans, chopped

Preparation

Cream butter, gradually add sugar and beat well with electric mixer. Add egg and beat well. Add oil, vanilla and mix well. Combine and sift flour, soda and salt. Add to creamed mixture. Stir in oats, crushed corn flakes and pecans. Using a small scoop or teaspoon, place dough on cookie sheet and press down slightly with tines of a fork. Bake at 325 F for 15-18 minutes. Cool slightly before removing from cookie sheet.
