Sweet Potato Casserole With Pecan Praline Topping
3 pounds medium sweet potatoes
1 1/2 cups sugar
1 teaspoon vanilla extract
2 large eggs
4 ounces evaporated milk
1/4 cup butter, softened
1 cup firmly packed light brown sugar
1/3 cup all-purpose flour
1/3 cup butter, melted
3/4 cup coarsely chopped pecans

Heat oven to 350 F. Grease a 1.5-quart baking dish.
Peel and slice the potatoes, place in a medium saucepan and cover them with water. Cook over medium heat for 15 to 20 minutes or until fork-tender.
Drain the potatoes and pour them into a large mixing bowl. Mash well with a potato masher or hand mixer. Add sugar, vanilla, eggs, evaporated milk and butter. Mix very well. Pour mixture into the prepared baking dish.
In a medium bowl, combine topping ingredients. Spoon mixture over the potatoes. Bake 30 to 40 minutes.
