Ingredients

1 1/2 pounds ground beef
1 (14-ounce) can diced tomatoes, undrained
1 envelope taco seasoning
2 (5-ounce) packages yellow rice
1 (16-ounce) block pasteurized process cheese, cubed
1 (10-ounce) can diced tomatoes and green chilies, undrained
1 (10-ounce) bag corn chips, crushed
Chopped onions, lettuce and tomatoes

Preparation

Brown ground beef in a skillet; drain well. Blend in tomatoes and taco seasoning; simmer 5-10 minutes. Cook rice according to package instructions; set aside. In a large bowl, microwave cheese until melted (or melt over low heat in a large saucepan); stir in diced tomatoes and green chilies until blended well. Add browned beef and cooked rice to cheese mixture, blending well. Pour into a greased 13- x 9-inch baking dish. Sprinkle corn chips over top. Bake at 400 degrees for 10-15 minutes, until heated through. Serve with onions, lettuce and tomatoes. Makes 10-12 servings.
