YEAST DUMPLINGS

Ingredients

1 cup milk
1 stick butter
Pinch of salt
1 package dry yeast
4 cups all-purpose flour
1/2 cup sugar
Pinch of salt
3 eggs

Preparation

In a small saucepan, heat milk and butter over low heat until butter melts. Remove from heat and cool to lukewarm. Dissolve yeast in warm milk. In a large bowl, combine flour, sugar and salt. Add yeast mixture and eggs. Mix together, adding more milk or flour if necessary to make a soft dough. Turn out onto a floured board and knead until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place 1 hour. Form dough into balls about the size of softballs. Let rise in a warm place for 30 minutes. In a large kettle with a tight-fitting lid, heat about 2 inches of lightly salted water to a boil. Drop dumplings in water and cover tightly with lid. Boil for about 20 minutes. Remove dumplings from water and immediately place in a large casserole dish. Keep covered until ready to serve. Makes about 6 dumplings.
